Happy Rex Manning Day!

Incase you didn't know today is Rex Manning day, a fictional holiday dedication to a fictional douchy pop star from the movie Empire Records. This coming of age film came out when I was five and not exactly coming of age, but when my angsty 15 year old self finally experienced it at a sleepover with my older and cooler cousins I was smitten. This is possibly the reason I still try to dress like a dirty 90's kid. So in honor of Rex Manning Day check out this awesomely grungy editorial from Erin Wasson, and If you haven't seen the movie it's time to seriously start evaluating you life.

Rainy Day

Today my boss asked me if I was cold, I told him no, I just like to look like a wizard.

Meatless Monday

Save your eggshells to crush up in the garden, just make sure to rinse them first.

I am a vegetarian and I love it, but it is definitely not for everyone (my husbands favorite food is steak) but I think everyone could do with eating a little less meat and a little more whole foods, so I will be sharing some of my favorite healthy meat free recipes! 

Now this meal definitely does not fall into the category of healthy but it does fall into yummy and meat free so just go with it (It was one of those days were you need a little comfort food when you get home so you don't strangle your husband.) Next time I promise it will be healthy! 

German Pancakes:
(Im positive that there are much more fancy ways to make this, but this is the recipe I've used since I was a kid)

6 eggs
1 cup of flower
1 cup of milk (we used almond milk)
Butter


Pre-heat the oven to 425

In a large mixing bowl mix together eggs, flower, and milk.

In two dishes or pie pans melt enough butter to cover the bottom of the pan. (I just stick them in for a   few minutes while the oven is preheating)

Pour mixture evenly into both pans and cook for 13 min.

Enjoy! They taste great with syrup, fresh fruit, or lemon juice and powdered sugar

Sunday Picnic

Today I made Taylor sit outside and enjoy the sun, I had to bribe him with cheese. Also this weekend he was an angel and helped me start our little garden, which I am so excited about hooray for growing out own food!

 I once asked my friend Chris how I could become more 'metal,' He said I would have to start listening to metal music. Valid point, but I am going to have to disagree because I am feeling pretty metal today all thanks to my (vegan) leather pants.

I am a firm believer that what your put out into the universe you get back whether that is kindness or just some really sweet overalls.  I was rocking overalls on the daily all the way into junior high school and there has been a void in my life since I let The Man convince me I was too old for them. I am older wiser and have long since grown out of caring what people think of me, so it  is official, the search is on, and the universe better deliver.
